200g Lean beef fillet strips
1/2 Small onion, sliced
1/2 Medium red pepper, seeds removed and thinly sliced
60g Baby corn, cut in half
100g Tender stem broccoli
1 Clove garlic, crushed
2 Red chillies, deseeded and sliced
1 Courgette, sliced
60g Sugar snap peas, sliced
2 Tablespoons of Wicklow rapeseed oil
2 1/2 Tablespoons oyster sauce
3 Tablespoons sweet chilli sauce
3 Tablespoons of soya sauce
1 Tablespoon of sesame seeds
1 Tablespoon of chopped coriander
EGG FRIED RICE
200g Cooked rice
75g Cooked ham, chopped
120 Sweetcorn niblets
2 Tablespoons of sesame oil
2 Spring onions, sliced
60g Garden peas
2 Eggs, beaten
CHINESE FIVE SPICE
1 Teaspoon of fennel seeds
1 Star anise
2 Whole cloves
1 Teaspoon cumin seeds
1/2 Teaspoon mustard seeds
1/2 Teaspoon ground cinnamon
1 Teaspoon of ground ginger
First make Chinese five spice mix; heat a pan until very hot and place cumin seeds, mustard seeds and fennel seeds in, and dry roast until the seeds start to pop. Remove them from the pan and cool. Once cooled, transfer into a pestle and mortar.
Add Star Anise, whole cloves, cinnamon, ginger and grind until smooth, leave aside until needed.
Heat a large wok over high heat until hot, add in half of the Wicklow rapeseed oil and swirl around to coat the sides of the wok. Heat until very hot and just starting to smoke.
Add the beef and quickly stir fry till browned and just cooked. Transfer from wok to plate set aside till later.
Heat the remaining oil in the wok over high heat. Add the onion, pepper, baby corn, tender stem broccoli, courgette, sugarsnap, red chilli and garlic. Stir fry for 2 mins. Add 4 tablespoons of water if needed to loosen up mix and stir fry until vegetables are tender crisp, add back in the beef, oyster sauce, sweet chilli sauce and soya sauce and combine, add sesame seeds, top with chopped coriander herb. When it’s piping sizzling hot it’s ready to serve.
For the Egg Fried Rice; in a medium sized frying pan heat the sesame oil with the finely sliced spring onion and cook stirring for a minute. Then stir in the cooked ham, sweet corn, cooked rice and peas.
Stir mix well and quickly until everything is piping hot, make a well in the centre of rice mix and pour in the beaten egg mixture and cook out stirring until egg is completely cooked and mixed through the rice, season with salt and pepper.
Serve with the beef stir fry.. And enjoy.
